1/ Finely slice the vegetables and drizzle them with lemon juice.
Mince the garlic in a press and add to the vegetables. Season. Drizzle with olive oil.
Marinate for 6-12 hours.
2/ Slice strips of veal lengthwise and season.
3/ Add the veal, a sage leaf and marinated vegetables (fresh or tinned) and repeat on your skewers.
4/ Brown the skewers on the grill, griddle pan or very hot pan for 30 seconds to a few minutes on each side depending on your cooking method.
